紅菜頭發達芝士沙律(附做法)

此日誌上的沙律是我女兒所做,喻意吉祥,正所謂紅運當頭,發財就手。

新春頭,大家都想圖個吉利,而這一道開胃前菜,那正好
便算是代女兒送給大家的開年禮物!

Roast beetroots, red onion, beans, feta and spinach salad! It is very yummy and easy to make.

Roast the beetroots with red onion with olive oil, balsamic vinegar and some honey for an hour, half way through break in a slab of feta and keep baking in the oven.

Meantime blanch the beans in boiling salted water for 2 minutes and then strain and put in to a bowl of ice water so it doesn't continue cooking.

On a plate lay out the spinach and then I would put the beetroot mixture in a bowl add the beans and add a bit more olive oil and toss it and lay on top of the spinach leaves.
